Cannonau of Sardinia

Baione is the name of an instrument made from cork, used by Sardinian farmers in ancient times to transport the grapes along the steep rows of vines in the centre of Sardinia.
Cannonau is the most famous Sardinian red wine. The vine was introduced to the island during the Spanish occupation (XV cent.) and spread throughout Sardinia. The grapes are harvested from the characteristic vine saplings, which produce less than 70 quintal per hectare. The bunches of grapes almost touch the ground and, thus benefiting from the warmth irradiated, reach a perfect ripeness. After the pressing of the grapes the must is left to soak in the marc for about 6 days, in order to extract the maximum colour and best tannins.
The wine is then left to mature for at least a year in durmast barrels. The organoleptic characteristics reveal a ruby red colour with a hint of gold, which is brought out with the ageing of the wine in bottles. The result is an intense winey fragrance and a warm, delicate, lingering taste.
This wine is particularly recommended to accompany roasts and strong mature cheeses. It should be served at temperatures of between 18 and 20°C, after being left to breath for an hour before drinking.
