Good vine-growers traditionally used to dedicate some rows of their vineyard to the cultivation of “special” grapes, from which the precious “special occasion wine” was made. They were mainly very aromatic grapes, such as Muscatel, Sardinian Malvasia and Nasco. The mature grapes were vinified through fermentation in small barrels (barrique type) and jealously guarded in cool cellars where they were left to age for at least a year.
Dulce is today’s version of that very old precious wine, offered in Magnum bottles of 2 lt.
It is best served chilled (10 – 12°C), preferably with sweets made from almonds, such as “amarettus” and “gueffus”, a pleasant traditional conclusion to any festive meal in Sardinia.
