Muscatel of Sardinia Controlled Denomination
of Origin
This wine comes from the vinification of muscatel grapes from the hills
of Trexenta, harvested early in order to safeguard the primary aromas.
The must, obtained by gentle pressing, is left to ferment partially,
until it reaches an alcohol content equal to 4%. Fermentation is then
interrupted by filtration and the product is stored at a temperature
of 0°C. It is then treated in autoclaves with special yeast for
at least 60 days at temperatures not exceeding 15°C to obtain the
delightful sparkling effect. The result of this process is a sparkling
wine which boasts extremely refined, delicate organoleptic properties.
It is the colour of straw, with a pearly effect and numerous fine to
medium grains. Its has an intense, delicately aromatic, fruity fragrance,
slightly musky with a hint of ground walnut. It has a sweet, sapid,
full-bodied flavour.
It is served at the end of the meal with dessert at a temperature of
8° - 10°C.
