Vermentino of Sardinia Controlled Denomination
of Origin
This wine comes from the best quality Vermentino grapes,
harvested in chests and stored for a few days in fridges until they
reach a temperature of 0°C. The grapes are then pressed and the
stalks are removed. There follows a brief period of maceration at cool
temperatures in order to extract the maximum aroma possible characteristic
of this grape.
A secondary gentle pressing obtains a must flower which, once it has
cleared, is left to ferment with selected yeast at a temperature of
18°C. The result of this vinification technique applied to top quality
grapes is excellent: the wine is the colour of straw with just a hint
of green, it has an intense fruity aroma and a strong lingering flavour.
In short, the process of vinification adopted intensifies the typical
characteristics of the grape.
The wine should be served at a temperature of 10°C, preferably with
fish dishes.
