Controlled Denomination of Origin
This wine is a jewel of Sardinian oenology. It has ancient
roots and comes from a vine of the same name. The method used to produce
this wine is of particular interest: the wine is refined in partly empty
barrels of chestnut or durmast wood and stored in an environment subject
to rapid thermal changes. The presence of the air allows the formation
of a film on the surface of the wine caused by the special yeast which
is used to assist the ageing process.
Its golden colour with a shade of copper and very intense scent, particularly
of almond blossom or amaretto, the almond liqueur, make
it a very enchanting wine. Its concentrated, warm, consistent flavour
with a pleasant bitterish tang, means it lends itself to being both
an aperitif and a dessert wine. Its unmistakable character also makes
it a wine for contemplation, to be sampled alone.
It is best served at a temperature of 12°C.
